V Kavarni TAM TAM je kava kultura, doživetje in osebni ritual. Zato pri nas ne strežemo običajne kave. Naša specialty kava prihaja iz lokalne ljubljanske pražarne BUNA, kjer vsako zrno obravnavajo s spoštovanjem do ljudi, okolja in seveda – do vrhunskega okusa.

Pražarna BUNA sodeluje neposredno s pridelovalci iz Brazilije, Kolumbije, Paname in Mehike, s čimer zagotavlja pravično trgovino in popolno sledljivost. Vsaka skodelica, ki jo postrežemo, je tako del širše zgodbe o odgovornosti in strasti, zaradi katere nas mnogi prepoznavajo kot kraj z eno najboljših kav v Ljubljani.

Kaj sploh je specialty kava?

Specialty kava pomeni najvišjo kakovost v svetu kave. Gre za kavo, ki jo ocenjujejo profesionalni degustatorji in dosega vsaj 80 točk na 100-točkovni lestvici po standardih SCA (Specialty Coffee Association). Pridelana je v posebnih mikroklimatskih pogojih, ki ji dajejo edinstven karakter. Pomemben del te kulture so sledljivost, pravična trgovina, trajnostni pristop ter spoštovanje do okolja in skupnosti, ki kavo pridelujejo.

Za specialty kavo je značilno, da prihaja iz manjših kmetij, kjer je poudarek na ročni obdelavi in transparentnem poreklu. Zrna so vedno sveže pražena v majhnih serijah z jasno označenim datumom praženja, da ohranijo bogat naravni profil okusa brez umetnih dodatkov. Vsaka skodelica ponuja kompleksne in naravne aromatike – od sadnih in cvetličnih do čokoladnih in oreščkastih not.

V Kavarni Tam Tam uporabljamo izključno eno izmed izbranih različic pražarne BUNA, ki je znana po svoji specializaciji za pravično trgovino in sveže praženje. Naša mešanica kave vsebuje 70 % Kolumbije (Huila) in 30 % Brazilije (Fazenda Camocim) – sveže pražena kava z uravnoteženim okusom, prijetno sadno svežino ter bogatimi čokoladno-oreščkastimi notami.

  • Brazilija (Fazenda Camocim): Blaga kislost z notami kakava, lešnikov in suhega sadja. Idealna izbira za klasičen espresso.
  • Kolumbija (Huila): Uravnotežena in elegantna, z okusom rdečega jabolka, karamele in prijetne sadne svežine.
  • Panama (Los Lajones): Kompleksna in živahna kava z izrazito cvetlično in zeliščno aromatiko.
  • Mehika (Decaf): Naravno dekofeinizirana kava iz regije Chiapas, z nežnim telesom ter okusom mlečne čokolade in orehov.

BUNA nenehno dopolnjuje svojo ponudbo. Kmalu pričakujejo specialty kavo tudi iz Nikaragve.

Posebnost kave BUNA je v njeni svežini. Pražijo jo sproti in v majhnih serijah, zato ima vsaka skodelica pri nas poln in svež okus z znanim datumom praženja. Ker kava potuje do nas brez posrednikov, poznamo celotno pot – od pridelovalca do vaše mize.

BUNA skrbi tudi za okolje z embalažo za večkratno uporabo in predelavo odpadkov. Tako lahko naši gostje z vsakim požirkom podprejo pravičnejši in bolj trajnosten sistem.

  • Uporabljamo izključno sveže praženo kavo iz pražarne BUNA.
  • Ne uporabljamo umetnih sirupov ali arom – le pristen okus kave.

BUNA works directly with growers from Brazil, Colombia, Panama, and Mexico, ensuring fair trade and full traceability. Every cup we serve is part of a broader story of responsibility and passion, which is why many recognize us as a place with one of the best coffees in Ljubljana.

What is Specialty Coffee?

Specialty coffee represents the highest quality in the world of coffee. It is evaluated by professional tasters, scoring at least 80 points on a 100-point scale according to SCA (Specialty Coffee Association) standards. It is grown in special microclimatic conditions that give it a unique character. Important aspects of this culture include traceability, fair trade, a sustainable approach, and respect for the environment and the communities that grow the coffee.

Specialty coffee is typically sourced from small farms, focusing on hand processing and transparent origin. The beans are always freshly roasted in small batches with a clearly marked roasting date to preserve a rich natural flavor profile without artificial additives. Each cup offers complex and natural aromatics – from fruity and floral to chocolate and nutty notes.

At Tam Tam Café, we exclusively use one of the selected varieties from BUNA, known for its specialization in fair trade and fresh roasting. Our coffee blend contains 70% Colombia (Huila) and 30% Brazil (Fazenda Camocim) – freshly roasted coffee with a balanced flavor, pleasant fruity freshness, and rich chocolate and nutty notes.

  • Brazil (Fazenda Camocim): Mild acidity with notes of cocoa, hazelnuts, and dried fruit. Ideal choice for a classic espresso.
  • Colombia (Huila): Balanced and elegant, with flavors of red apple, caramel, and pleasant fruity freshness.
  • Panama (Los Lajones): Complex and vibrant coffee with distinct floral and herbal aromatics.
  • Mexico (Decaf): Naturally decaffeinated coffee from the Chiapas region, with a gentle body and flavors of milk chocolate and nuts.

BUNA constantly expands its offer. They are soon expecting specialty coffee from Nicaragua as well.

Our specialty coffee comes from the roastery BUNA, where they believe in transparency and sustainability. Every bean is part of a fair trade system that supports farmers and their communities.

The special feature of BUNA coffee is its freshness. It is roasted on demand in small batches, so each cup with us has a full and fresh taste with a known roasting date. Since the coffee travels to us without intermediaries, we know the entire journey – from the grower to your table.

BUNA also cares for the environment with reusable packaging and waste processing. This way, our guests can support a fairer and more sustainable system with every sip.
